Grilling is proabably the best way to cook a steak, but if your looking for tastey alternatve, try this.
First start with a good New York strip, 1 1/2 to 2 inches thick.
Allow meat to get to room temperature before cooking. While meat is sitting out, salt with kosher salt and coat with fresh ground black pepper.
On stove top, get a pan very hot. A cast iron pan works best.
Sear meat three minutes each side. This WILL get smokey.
Turn steak over and reduce heat to medium, add about 1/2 stick butter per steak to pan and a couple splashes of worscheshire sauce. cook steaks an additional 3-6 minutes per side, depending on how you like them done.
Just before steaks are done add 2-3 shots brandy to pan, add 1 lit match. ( This will be impressive!) Allow alchohol to burn off, place steaks on plate and pour juices from pan over steak.
Let steak sit 5-10 minutes before eating, serve with you favorite side dish and beverage.
Make appointment with cardiolodist in morning, enjoy!

Bear,
