CONCH CHOWDER

Qty Measurement Preparation Ingredient

3 lbs ground conch
1/2 lb ground salt pork
2 medium finely chopped onions
4 cloves finely chopped garlic
1 large finely chopped green pepper
1 28 oz drained/chopped can of tomatoes
6 oz can of tomato paste
1 tsp poultry seasoning
10 bay leaves
2 tbsp barbecue sauce
1 ½ tsp salt
1/2 tsp pepper
2 qts water
1 tbsp vinegar
3 lbs peeled/cubed white potatoes

in a large skillet over medium heat fry pork, add onion, garlic and green pepper; saute until tender. add next 8 items. simmer over low heat for 10 minutes. in a 6 quart saucepan, combine water, vinegar and conch; bring to a boil. stir in tomato/pork mixture and simmer about 2 hours. add potatoes and simmer 20-30 minutes until potatoes are tender. remove bay leaves before serving. serve hot.
