If you want a smokey flavor you have to use wood or lump charcoal as the heat source.

Charcoal briquettes(Kingsford) have anthricite coal added as an ingredient....not what I want to cook with....

This is something cool.
It involves cooking meat DIRECTLY on the coals.
I initially saw Alton Brown do this on TV.For real.
The result will be amazingly authentic rustic cusine.


This is very easy.

I do shirt steaks and flank steaks like this....first...
Fajita marinade

1/2 cup vegetable oil
1/3 cup soy sauce
1/2 cup onion
2-4 cloves garlic
1/4 cup lime juice
1/2 teaspoon cumin
3 tablespoons brown sugar

Blenderize until smooth & creamy.
Marinade away.....



1. Build a fire.....
2. Get a big a$$pile-O-embers....
3.Blow dust off glowing embers with hairdryer....
4.Put marinated steak directly on reda$$ed emebers....
5. Skirt steak...about 1min. then pick it up...and blow off the embers...(blow offthe steak and the fire)...and put the steak raw side down on the fire.
6.Flank steak.....4-5 min/ side....same way.
7.When done wrap in fiol & hold 15 min...while you...
8.Put cast-iron frying pan (12"-14") directly on embers to fry peppers and onions....
9.Asssemble all ingeredients....tortillas, cheese...
10. Slice steak against the grain ...thinly...

for some Bad A$$ Fajitas!!!!I've got pix I'll post 'em when/if I find them.
This is cool.

sounds good may will have to give that a try, ussually cut the skirt steak up first, marinate it and cook it in kind of a basket thing (more for veggies/shrimp I think) but that sounds to good not to try

Just wanted to post back just how GREAT these are like this. I would never have thought about cooking directly on the coals but it worked great for fajitas. I should have trimmed the fat off back side of skirt steak, that plus the marinade I used was to much like a barbecue sauce, kind of thick and sugary, (tried a new marinade and it wasn't what I was used to... it was by KC Masterpiece, said for fajitas, was spicy but as I said to much like a barbecue sause). Anyway between a little to much fat and that sugary BBQ sauce it kind of burnt on one side but just trimmed the fat off before we sliced them and it was GREAT. Will be doing them like this from now on.

Here's what I marinade these steaks with...I'll edit to attach above...

I'm not positive but talking about cooking on a motorcycle forum could possibly be a "Man Law" violation. :roflback:

I hear ya, BUT, I think this one is OK because it includes grilling.
