Auto does a beautiful job of wings on parchment paper in the oven but the Egg has officially taken over. It's been morphing from brisket & ribs etc to pizzas and some desserts to now taking over wing duty......

Best I've had in my recollection, good coal, cherry and hickory chips (not too much) and Bam!! Drip tray for 2/3's of the cook and finish direct on grill. If you have a kamado style unit you owe yourself to try it!!

That was yesterday, brined pork tenderloin just went on for tonight. :DD

We love our egg, we cook everthing on it pizza, chicken, pork roast, and even do seared veggies.

Homemade BBQ sauce (you all are better than me at that) and apple topper. Finish the last 45-30 min of the cook with it basted on and makes a very nice side with pig... :DD

Lots of leeway to get creative.

Apple Pork Topper

3C Apple Sauce

3T Dijon Mustard

3T Brown Sugar

2T Apple cider Vingar

1tsp Rubbed Sage

1/2tsp Black Pepper

1/2tsp Salt

1/8tsp Cinnamon

Optional: 2-3 Apples, peeled, diced and sauteed until golden brown and tender in 2T Butter.

Place all in a pot and simmer on low until thickened as desired. Adjust sweet/salt to taste. Spoon over Pork Roast, during last 30-60 minutes of Cook time and/or over*the pork at the table.
