I've got a few thermometers but the go to is a Taylor trutemp with braided metal cord. A quick search shows the updated version has a silicone cord. Prolly a commercial safety thing. I liked the braided cause it was less likely to get damaged in a flair up. Just set it and wait for the target temp. No need to ever open the top until the alarm goes off. Every time you do you lose your heat, smoke and moisture. The very easiest and nearly fool proof way is get a BBQ Guru. You'll love it

I have a Pitmaster IQ that's very similar to the Guru. It's nice, and does a decent job holding temperature. But then I got a Tip Top Temp, and I haven't touched the IQ since. You crack the bottom vent open just a bit, and put the TTT over the wide-open top vent and let it regulate the temperature. I did a 16-hour butt cook with the TTT and it held temperature within 10 degrees the entire time. Just for fun I did a test cook with it and held 185 degrees for 3 hours.

For $30 it's worth giving it a try. I love mine.
