It's 5:20 a.m.
Do you know what your brisket is doing? I do.....smoker is holding steady at 220* and after 30 min in she's at a nice comfortable 55*......it's gonna be a long wait, but well worth it.

Still holding around the 220* mark.....brisket is up to 103*.....creaping ever so slowly to the magical 190* mark.
