New, to me, butcher shop

So I went into a butcher shop yesterday, a place I've not been.

Met the Owner/Butcher and chatted up with him for awhile.

Talked about getting a brisket for this weekend, talked about other cuts of meat. I looked around at his supply and prices, including fish and shrimp .... stuff looks GOOD, well priced, and the place is clean.

I told him that I was on my way into town and couldn't take the brisket with me cause I had no way to keep it cold and I'd be gone for about 4 hours.

When I came back, he said, 'Thanks for coming back!'
I said 'sure thing' .... so I bought the brisket ....

Then I asked him about the St. Louis cut ribs that he had ... I said how much lead time do I need to give you if I want some of those, WITHOUT that rub on them .... He said that if I tell him by 1:00pm on Thrusday he could have them for me by the weekend (Sat) .... or, during the early part of the week he could have them the next day.

So then he says to me "you like them with rub on them?"
I said, well yeah, I'll put my own rub on them. So then he says, "Here, take these, and let me know how you like them, ON THE HOUSE" .... so he gave me a slab of ribs .....



now there's a guy that knows how to market his product and to get a guy to come back to his store .... you think I'll be going back there ??? Oh Hell yeah !!

I'll be cooking up the ribs this afternoon for diner tonight ...

The brisket, well I rubbed it down last night and it will go in the cooker about midnight for diner tomorrow .... guest will show up about 3:30 and we plan to eat at 5:30 ......

OH, and a bonus !!! Iggy will be here tomorrow evening too

Just another great part of the smoking world. Hanging out at butcher shops and visiting with the butchers. He sounds like a good one.

My mom worked at a small hometown meat locker/processing place for 20 yrs. I learned a ton from watching them butcher and asking questions.

And I developed a love for liver & onions at a young age. Had it twice a week. Eat it or go hungry. I still like it.

Hope your ribs & brisket come out great!

there is one about 40 miles or so from ya Chip, its very near out last stop on the way back from Cherokee. I think it is in Weber City.
