Mud Bug Feast.....

So Iíve eaten a lot of different foods while working down south of the line and everything has proved to be delicious. Auto wouldnít touch this one with a ten foot pole tho....Once I got the technique down, you can really tear thru them.
Iím going to build a pot like this at home, it has a strainer dump bucket built in. They fry the sausage dry, throw it in with the boiling potatoes and then finally the corn. Did I mention they spice the heck out of the water that everything is boiling in? Most interesting corn ever.... Dump everything in a cooler and then in with the mud bugs, we went thru 4 sacks of them. Some truly good eats! But Hell, Iím sure Iím preaching to the choir....

A new convert.

Now for some alligator tail and clams on the barbecue pit.

It's season now! Early season so the bugs are small and expensive!!

My work mate has rice fields and ponds, so the price is perfect, free!! Ice and burlap and not one came out with a straight tail that I seen anyways. He did apologize as he would have liked to have them one size up but he doesnít like them jumbo.
We gave him a week off so he could help host a Wounded Warrior duck hunt that morphed into a deer / hog hunt... He brought this haul and cooker back in appreciation of getting the time off. People down here are solid folk....

I’ve tried mud bugs, I don’t see the fascination, however, I’ll admit they were probably not fresh and they were always small.
