Big Jim's WORLD FAMOUS Spinach Spheres
Big Jim's WORLD FAMOUS Spinach Spheres

2 10 oz chopped spinach, thawed or cooked, and squeezed dry
1/2 cup butter (do not reduce amount, orig. is 3/4 cup)
1 cup grated Parmisan cheese (can reduce to 3/4 cup)
6 lightly beaten eggs (I use EggBeaters)
1 box StoveTop chicken stuffing mix
Pepper


Combine, form smaller than golf balls.
Bake 350 10-12 min, or until starting to brown
