Smokin'.....
I dove in headfirst.
Picked up a Broil King Keg for a song, and I've done a simple chicken and ribs. Today I'm conquering a brisket. Made up a drunken rub (grabbed a bunch of stuff from the spice cabinet while I was drunk) and let it sit overnight, popped it on the smoker this morning to let it do its thing. Currently enjoying the warmish 40 degree morning with a cuppa joe and a Varina Farms Breakfast Blend. Sent from my iPad, probably while I'm pooping.

  The only way it might be better is if there was a little Irish in that coffee.

Looks great. Just be aware that brisket will hit a plateau and stay for a LONG time. Lots of collagen being converted to that yummy goodness. Do not get anxious and bump up the temp. It'll get there.

But, you didn't. You said you "dove in head first..." -- so, I got nuthin'...  The meat looks great though!

If I do say so myself, it came out really good. The rub was a bit spicier than Dana liked, but that's an easy fix. I also need to be more patient when setting the smoker up. I should have used smaller pieces of charcoal and done a better job making sure everything was lit and settled in before I put the meat on. Damn fire went out twice.
But it still came out great.
