Pumpkin Dip
Tis' the season for pumpkin. I am not particularly a fan of pumpkin pie, and this is not a recipe for pie, but it is really good stuff to have out on the coffee table.
It's a dip that you serve with Ginger Thins (thin ginger cookies) or Ginger Snaps. I prefer the thins. 1-8 oz package of Philly original cream cheese (leave out for a few hours to assume room temp before mixing) 1-12 oz can One Pie Pumpkin 2- cups confectioners sugar 1- tsp cinnamon 1/2- tsp nutmeg Mix all ingredients at room temp, chill and serve

I tried it this weekend. I think you really want the Cream Cheese to be very soft so that it whips with the pumpkin. Mine was a littl too cold and was a pain to work with. It took almost two boxes of gingersnaps to consume it. Was very good stuff! Thanks for the recipie.

Mmmmm! That sounds good.
Lynda & Erica like the pumkin seeds, we got quite a few out of our 4 pumkins. Lots of simple recipes if you google.
