Khadai Gosht
This is a tasty and fragrant celebration of meat and spiced gravy/sauce, really good with basmati rice and flatbread. (Picture at bottom of this post)
There are numerous versions of this Indian recipe. Here's how I fix it. Ingredients 1 1/2 lb. of lamb, cubed for stew (or 1 1/2 lb. of chicken, cut into cubes) 28 oz. can of whole, peeled tomatoes 4 cups of chopped, medium-heat, light green pepper 1 cup of plain yogurt 3 tablespoons of olive oil (or other cooking oil) 2 teaspoons of ginger paste 2 teaspoons of garlic paste 2 teaspoons of lemon juice 1 teaspoon of red chili powder 1/2 teaspoon salt Cumin, coriander, ground black pepper, cinnamon, curry, ground cloves, ground nutmeg, tumeric to make garam masala seasoning 2-3 teaspoons of garam masala (instructions on how to make this seasoning follow) Directions Make the garam masala by mixing the following: 1 tablespoon cumin 1 1/2 teaspoon coriander 1 1/2 teaspoon ground black pepper 1 teaspoon curry powder 1 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/2 teaspoon ground nutmeg dash of tumeric In a big bowl, mix the yogurt, garam masala, garlic paste, ginger paste, lemon juice, and salt Mix the cubed meat into the bowl, cover it, and allow to marinate for 2 hours. Enjoy a few beers. Puree the whole, peeled tomatoes in a blender or food processor. Pour olive oil into a large skillet and heat to medium. Fry the green chilis in the oil until they start to turn translucent. Add the meat and marinade to the chilis in the skillet, keeping heat at medium. Cook for about 20 minutes. Gradually mix about half of the tomato puree into skillet, slightly reducing heat. Sprinkle additional garam masala, curry, coriander to taste and cook for another 20 minutes, continuing to reduce heat to a simmer. The sauce should be viscous and not thin, almost like a gravy. Make basmati rice according to instructions on rice packet, add a little ginger and butter to the rice once it's cooked. It should look like this when it's done. Enjoy!
