bologna recipe
Found my mom's hand written recipe for bologna we made when we butchered at home.
If you can't read the writing:100 lbs beef 20 lb pork or 3 qt lard liquid 10 lb granulated sugar 4 oz black pepper 5 oz salt peter in qt. hot water 6 lb salt She mixed it by hand in a tub and we put it into cloth bags which were then smoked and hung in cellar where they kept all winter and into the spring. We used "liquid patent smoke". It came in a bottle and she rubbed it over the outside of bolognas. I never quite figured out how they got actual smoke condensed into a liquid but it worked. Good memories.

I have always been partial to Lebanon bologna. Used to get it from a little butcher shop in Lewisburg, PA. Have never had any like it outside PA.
